Why does Evince for Windows look so much cleaner than the Linux version?

To be more specific, I would like Evince in Linux to open chapters to books without opening all of the sub-sections in those chapters as well. evince won’t show PDF’s not named like *.pdf

I can view a PDF file foo.pdf with evince. But when I rename it to foo, evince instead complains, Unable to open document “foo”. Error opening file: Permission denied [Close].
